Crock-pot Navy (White) Beans

Well this is how it happened. While my sister and I were visiting "The Show Me State" she made a dish that a friend of hers shared. Her friend relates that this dish and others were a staple when she was a child. So let's get to it. 1lb of beans soaked overnight, 1 cup of olive oil, 1 cup water, 1 or 2 10-12oz cans of seasoned diced tomatoes and season according to your taste buds. All the ingredients go into the crock-pot and cook on low for 6-8 hrs. Check occasionally ( I had a few teaspoons down the stretch) the last couple of hours for tenderness of the beans.
