Baby Kale and Baby Spinach Salad

Simple is good and good for you.


Baby kale, baby spinach, raisins, tangerines, grapes, walnuts, couscous with pine nuts, vinaigrette - Fresh orange juice, lemon juice, apple cider vinegar, olive oil. Avocado with cayenne pepper and Himalayan pink sea salt.

Can you say kale?

Kale, carrots, ginger, onions, garlic, salt, pepper,  Bragg's, water, grape seed oil and dulse.

No-Pasta Eggplant Lasagna[?]

We it turned out pretty dog gone good if I have to say so myself.  Check it out a FatFree Vegan Recipes.

Mine with a twist- I put vegan cheese on top at the end and used seasoned dehydrated eggplant.


If you just have to have noodle you could do that as well.  It so good I ate half the baking dish. Guiltless Meal.

I was out one night saw this sign and was like what?  So you guessed it. In I went to investigate.  The folks were friendly and explained the whole process.  Order who you want it including the crust [also have gluten free]. So I checked out the menu and went to work.




I was going to wait until I got home to sample this bad boy but oh know I just had to have one piece in the parking lot before departing.


The rest is history.  This will be one of my new pizza joints and you should give it a try to.

First Try at Flaxseed Crackers

I always looking for alternatives to crackers and bread that have items I either can not pronounce or have to look up to find out what it is.  This one is as simple as 1-2-3.  Found it at Eating Vibrantly.

You will find step by step directions that are too simple.  Next time I will be changing the flavor for twist.


You guest it.  They taste good and no additives, color number whatever and the list could go on.

I eat two to four a day.

Granola and all that......

So I ran out of oatmeal and for the past week my mornings started with granola and whatever I felt like putting in it.  For me that means dried fruit, fresh fruit, hemp seed, cinnamon, pumpkin seeds, almond milk or daterade, etc, etc, etc.

So give it a shot and enjoy.

Stew the way you like it.....

I got this recipe from FB Joronda by way of Angelica. Between the two of them they have some plant-based goodies for you.


I this photo and the rest was and is history as they say.  I made it within 24 hours and 48 hours later and made it again.  


The first time I used my homemade Jamacian spice blend.  Today I used my homemade Creole spice blend.  You can't go wrong.  Next time I'm using ginger and fresh basil.  Once you try it you'll be hooked.  Thank you Sister Joronda and Angelica.
