Warm(Great) day for a salad.....


Put some time in the yard this morning and this was just what the Dr ordered. As you can tell I like my salads colorful. Hey, the more color the more nutrients. So with that said have a salad today.  Peace. 

This is some good dressing. 


Romaine, carrots, tomatoes, olives, dulse , crunchie hemp flakes and "Soul-Fu".

Tofu Scramble

After enjoying the early morning sipping some water it was then time to get some smells going in the kitchen. 

Tofu, chard, carrots, garlic, leeks, olive oil, tomatoe, sun dried tomatoe, vegan cheese, sea salt, pepper, cumin and tumeric. Garnished with dulse with brown rice. Enjoy.

Avocado Nice Cream

Well I did it! It turned out great by my standards. If you like avocados you'll love the twist. I will be using chopped fruit and nuts next time. It also makes a great plantbased yogurt. Season to your taste. Be as creative as you'd like. Work that avocado! #Peace

Crock-pot Navy (White) Beans

Well this is how it happened. While my sister and I were visiting "The Show Me State" she made a dish that a friend of hers shared. Her friend relates that this dish and others were a staple when she was a child. So let's get to it. 1lb of beans soaked overnight, 1 cup of olive oil, 1 cup water, 1 or 2 10-12oz cans of seasoned diced tomatoes and season according to your taste buds. All the ingredients go into the crock-pot and cook on low for 6-8 hrs. Check occasionally ( I had a few teaspoons down the stretch) the last couple of hours for tenderness of the beans.
